If I can make something that is super delicious and still healthy, I will! Then I don't feel so guilty for eating so much. ;)
These cookies are so easy to make and soooo yummy! They don't contain sweet potatoes, its actually yams. A lot if people confuse the two so thats why I think they were named sweet potato cookies. You will need:
1 cup white sugar (I did 2/3 cup stevia and 1/3 cup sugar.)
1 egg
1 cup applesauce
1 tsp vanilla
2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 cup mashed yams (the one that is orange when you scratch the skin, often mistaken for sweet potatoes)
1 cup chocolate chips
Peel and cube the yams and put into a pot of boiling water. Boil until fork tender, mash and set aside.
In a large bowl, cream together the sugar/stevia, egg, applesauce, and vanilla. In another bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir into the creamed mixture. Add the yams and mix well. Stir in chocolate chips. Spoon dough onto greased baking sheets and bake for 12-15 minutes at 350 degrees F. Cool on a wire rack and enjoy!
